So, my 2012 goal is to try one "new" vegetable a week. I don't really eat vegetables, mostly because I think they taste like dirt and I have no idea how to cook them. I've always just eaten them naked and raw, or boiled and mushy. They have a high yuck factor. But this year I'm going to broaden my horizons and search out new and exciting vegetables...and recipes...and learn how to love vegetables and all of the nutritional goodness.
This week's vegetable: Pachyrhizus erosus, or the Jicama.
Now, to be truly honest, I've had Jicama before, but this time I actually bought one and ate it. The Jicama is a sweet, crisp, crunchy, carb of a tuber that you just peel and devour. I sliced it up and ate it with a buffalo chicken concoction threw together.
Here's how I rate this vegetable:
Taste: A-...I could still sense some dirt
Texture: A...I love things that go crunch
Ease of use: A-...I had to wash and cut it...I hate cutting things.
Likeliness that Carrie will eat it again: 100%
Yea for week one's vegetable...goooooo Jicama!
