Adventures in Vegetables: week 2

Ok, so this isn't a new vegetable either...but I'll tell you what is new:  the basket I steamed it in.  While visiting my friend in DC she made butternut squash and it was awesome.  So, while cruising Costco on a Saturday afternoon (not for the faint of heart) I found a huge container of cubed butternut for only four dollars.  Four dollars for lazy proof vegetables?  Yes please!  Well I threw that in my cart...along with 4 heads of romaine lettuce (that makes me gag every time I think about eating them), and headed to Target to buy a steaming basket.

Since I like to keep it simple when it comes to cooking (simple/lazy...same dif) I threw that cubed squash in the steaming basket, steamed it, spritzed it with some of that easy-peasy spritz butter spray, sprinkled it with cinnamon and brown sugar, mixed it with some quinoa and ate my super hardy complete protein meal.  In hindsight I should have skipped the cinnamon and quinoa and just stayed true to my love of butter and sugar.  But overall, I was pleased.

Here's how I rate this vegetable:
Taste: A...I won't lie, I ate some of the leftovers cold...for breakfast...mmmmm
Texture:  A...creamy dreamy
Ease of use:  A+...Costco took the work out of this one
Likeliness that Carrie will eat it again:  100%
 
And a short Jicama update:  I only ate 1/2 of it, the other 1/2 ended up molding in my fridge before I finished it...the fate seen by most of the vegetables I purchase.  Vegetables just aren't single person friendly foods...now Twinkies on the other hand...

I have the BEST recipe for butternut squash, but it might take a smidge more effort: Mix 2 Tbsp olive oil, two minced garlic cloves, 1/2 tsp salt, 1/2 tsp pepper, and 1 tsp parsley flakes in a bowl. Add your pre-cut butternut squash and stir until coated. Then add 1/3 cup of grated parmesan and stir until coated. Pour onto a greased pan and cook in the oven at 400 degrees until soft (usually about 30-40 minutes, depending on the size of the cubes), stirring occasionally. Absolutely delicious!
